Tomato and Chili Jam

Method

  1. Cook all the ingredients together until veg are soft
  2. Put through a Mouli legume (or blend roughly)
  3. Return to heat and add sugar. Boil for quite a long time to reduce the sauce to a thick paste/jam. It won’t set like a jam as it does not contain pectin
  4. Pour into jars and seal

  1. Tomato 1000 gm
  2. Red Peppers 460 gm
  3. Chilies 70 gm
  4. Redcurrants 300 gm
  5. Fresh ginger 12 gm
  6. Red Wine Vinegar 150 ml
  7. Caraway Seed 2 tps
  8. Paprika 2 tps
  9. Sugar 600 gm
